The sprouting broccoli at this time of year is wonderfully robust and takes this fritter treatment very well. The nutty depth of the gram flour accentuates the natural sweetness and freshness of this beautiful vegetable. This makes a great snack or starter dish.
Ingredients:
2 cups gram flour
2 teaspoons red chili powder
1 pinch baking soda
Salt to taste
2 cups of broccoli florets
½ cup water
¼ cup oil
2 dessert spoons of garam masala
1 tablespoon chopped coriander leaves
Preparation Instructions:
Mix together the gram flour, garam masala , baking soda and salt. Gradually add the water to make a smooth paste. You are aiming for a thick pancake mix consistency so alter the water/gram flour balance to achieve this. Heat the oil in a deep pan. Place the broccoli florets into the batter and ensure they are completely coated. Put the coated florets in the oil and deep fry.
Remove from the oil and place on a paper towel to drain off the excess oil. Serve hot with any dip of your choice, while the bhajis are still crisp.
