Lunch Box Ideas

Lunches can be such a chore on a weekend let alone a weekday! The days I do have to make lunches, I struggle for some amazing epiphany to occur.

Sometimes I just go with what I know and what is basic. My daughter loves loves loves ham and cheese sandwiches so it’s not a stretch to change it up but keep it the same. My answer to that concept was ham and cheese quesadillas: simple, quick and guaranteed to please.

 Ingredients:

4 small flour tortillas

4  slices ham

4slices cheese 
(no-stick cooking spray)

Directions: Spray one flour tortilla  and place sprayed side down on skillet. Add cheese, ham, ham, cheese, flour tortilla (this exact order).

Spray top flour tortilla. Let bottom tortilla brown, flip over and let other side brown.

Feel free to serve the quesadilla with slices of avocado, tomato or onion.
