Chicken Kebabs: Vote For Your Favourite Lay’s Flavour

My biggest weakness during my pregnancy were kebabs. It didn’t matter how spicy, what meat, or what kind, I couldn’t get a enough of kebabs. I would ask my dad who worked near a great kebab place, to bring home a few with naan pretty regularly during my second pregnancy to satisfy my cravings.  I also remember growing up, the best nights would be ones where we would sit and watch an Amitabh Bachchan movie over naan and kebabs.

There are so many kebabs that we love in our family: the shish kebab, kathi kebab, lamb kebab…the list goes on.

As we all know, the kebab while often cooked on a skewer, many types are not cooked this way. Kebab plates can be made up of cut up or ground meat or seafood,  even with with vegetables; cooked on a skewer over a fire, or on a bbq grill; baked on tray or pan in an oven or on a countertop grill.

The word ‘kebab’ literally means ‘to roast’. So when I got the assignment from Lay’s to take a surprise box of ingredients and choose a recipe to make one of their hot flavours, of course I chose the chicken kebab recipe. Now if you know me, the thought of getting out the cutting board, pots, bowls, and putting on an apron are not appealing.

Pick up a chip with the flavours of chicken kebabs or make some? Hmm. When’s my dad’s next kebab run again? Pass the bag-0-chips please…

Off I went to pull together the ingredients from the box and the recipe you’ll see below to make these chicken kebabs.

A few spices, yogourt make up the marinade you infuse your chicken with over 30 minutes then add to skewers with  veggies and chicken and slip into the oven on broil.

Chicken Kebabs

1/4 tsp salt

1/4 tsp turmeric

1/8 tsp dry mustard

1/2 tsp curry powder

1/8 tsp ground cardamom

1 tsp lemon juice

1 tsp white vinegar

1/2 small onion, cut in half & broken into layers

2 boneless skinless chicken breasts

3 tbsp yogourt

4 small tomatoes, halved

8 bamboo skewers

1 lemon cut in wedges

bunch of parsley

 

Method:

  • Cut chicken breasts into 1 inch cubes
  • combine yogurt, salt, turmeric, mustard, curry  powder, cardamom, lemon juice and vinegar in non-reactive bowl
  • add chicken cubes and let sit in fridge for at least 30mins. IMG_2112
  • soak skewers in water
  • Thread chicken, onions, and tomatoes, peppers onto skewers
  • grill or broil 8-10mins, turning halfway through to ensure even cooking
  • garnish with parsley and serve with lemon wedges for squeezing on top
