The easiest no-bake chocolate cupcake recipe that’s moist, chocolatey and can be whipped up in less than five minutes.  Ok, so you’ve probably heard of mug cakes, you know the dessert sensation that’s made with easy pantry ingredients and ready in under two minutes? Well, what if I told you that you could make cupcakes using a similar method… yes, it’s true.
The best part, actually parts are that you can whip them up in one bowl, need no eggs and they are ready in 90 seconds.
Yes, just over one minute.  I promise you this isn’t like any other mug recipe out there.  I’ve tried a bunch of mug cakes and just never fell in love. I thought they were fun for a quick dessert fix but nothing would ever beat baking a batch of cupcakes. I think the biggest thing that. bothered me was the texture!
A few weeks ago, I wanted chocolate and my little one wanted to bake, the perfect storm I know. I was in no mood to make an entire batch of cupcakes because my husband was out of town so who would eat 10 of the 12 cupcakes haha (I hope he doesn’t read this lol). I decided my little one and I would try and make no-bake cakes but in the microwave, instant for me, fun for her.  Mind you, I would have been fine with a mug cake but to my toddler, it’s not cake unless it’s in cupcake form.
I took note of other times I had attempted to make a cake in the microwave and adjusted the oil and baking soda & powder. Because my little one is obsessed with everything sprinkles and chocolate chips, we added mini chocolate chips to the batter. After mixing up our batter I lined our silicone muffin cups with cupcake liners and poured in the batter three fourths up. 90 seconds later we had moist chocolate cupcakes. I’m talking warm, chocolatey, gooey cakes that tasted perfect by themselves or with some whipped cream… and sprinkles if you’re a 4-year-old.
 These no-bake cupcakes are a great alternative to baking an entire batch of cupcakes and it’s a wonderful quick fix for that chocolate craving! In addition to these super easy cupcakes, here are 6 other last-minute desserts that you can whip up in no time… who said the early bird gets the worm… or in this case the dessert.
No Bake Chocolate Cupcakes
Ingredients:
3 1/2 tablespoons all-purpose flour
3 tablespoons sugar
3 tablespoons cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon baking soda
3 1/2 tablespoons milk
3 1/2 tablespoon vegetable oil
1/2 teaspoon vanilla extract
3 tablespoon chocolate chips
pinch of salt

Method

  • Add all the dry ingredients in a bowl and mix well. Add the wet ingredients and mix until smooth.
  • Stir in the chocolate chips.
  • Line silicone muffin cups with cupcake liners and fill with batter three fourths high.
  • Microwave on high for 90 seconds. Do not overcook or the cupcakes will be dry. Let cool for 2 to

  • Top with whipped cream, ice cream or enjoy as is!
