Grilled Tandoori Chicken: Latest Recipe from SouthAsian Tasting Table Co-Host, Karen Johnson

Wishing summer was back? Well, you can still serve up some authentic meat on the tandoor, just use an indoor grill or oven! On-air personality and mother of two Karen Johnson shares with us her recipe for Grilled Tandoori Chicken.

Here’s her take:

This recipe has become a staple on our weekly menu. 

 All you have to do is prep the chicken the night before to marinate.  Next day ready to grill on BBQ, or grill.

Ingredients:
12 Skinless and Boneless chicken thighs ( they are more tender but you can use legs and breasts too)
Seasoning Mix
1 Teaspoon of the following ingredients  Pepper, Garlic, Ginger
½ cup of Olive oil
Salt to taste
Cilantro finely chopped
Tandoori Mix
100 grams of yogurt Plain Yogurt
2 Heaping Tablespoons of Kissan Tandoori Masala Mix (We love this brand)
1 Table spoon of Cream Cheese (1st secret ingredient to keep chicken moist)
1 Table spoon of Lemon Juice (2nd secret ingredient to keep chicken moist)

 

 

Preparation:

 
1) Wash chicken
2) In a bowl combine all the SEASONING  INGREDIENTS together. Pepper, garlic, ginger, olive oil, salt to taste and cilantro.

3) Dip chicken thighs into seasoning mix then put aside in dish

4) In a separate bowl  combine Tandoori Mix,  Plain Yogurt, Cream Cheese and Lemon juice

5) Mix well until mixture is smooth and no lumps

6) Then dip each piece of chicken into Tandoori Mix and place in pan.
Make sure all pieces of chicken are covered.

7) Once all the chicken thighs are covered with the Tandoori Mix place in dish and cover it.

8) Put the dish into the fridge over night to marinate.

The next day it is ready for the GRILL!
